Brewing industry has been part of most western economies since the nineteenth century.
The basic material of beer is fermentable starch source such as malted barley and water. Most beer is fermented with a flavored with hops and brewer's yeast. Less generally used starch sources include sorghum, cassava, and millet. Secondary sources (adjuncts), such as rice, maize (corn), or sugar, can also be used, sometimes to minimize cost, or to include a feature, such as adding wheat to help in retaining the foamy head of the beer. Grain bill is the proportion of each source of starch in a beer recipe.
Steps in the brewing process include malting, milling, lautering, mashing, fermenting, conditioning, boiling, filtering, and packaging. There are three major fermentation methods, spontaneous, cool and warm.
